Holiday Crumbles
Crumbles are easy for people who live the gluten free lifestyle - and they're also very versitile; you can make any fruit into a crumble!
If you need to be totally gluten free choose quinoa flakes instead of oats.
I based this recipe on the rhubarb crisp I used to make with my mother every late summer. We loved it with vanilla ice cream!
Make you crumble topping by mashing together the following ingredients:
1/2 tsp Aluminum Free Baking Powder
1/2 tsp Clean Baking Soda
2 Cups Gluten Free Flour Mix
2 Cups Quick Oats / Quinoa Flakes
1 Cup Grass Fed Butter (or Butter alternative for a milk free version)
2 Cups Fair Trade & Organic Brown Sugar
Set this aside.
Blend your fruit mix in your (9x9 or larger) baking pan:
1 tsp Apple Pie Spice (choose gluten free if possible)
1 Cup Fair Trade & Organic Brown Sugar
1 TBSP Gluten Free Flour Mix
1 Egg
Beat this all up into a nice syrup.
Add 8 Cups of sliced Organic / Local fruit to your baking pan - I use a blend of tart and sweet apples at Thanksgiving time.
Now thoroughly coat the fruit with the spice blend.
Bake at 350 degrees for 45 minutes.
